This one is hard to get my brain around. At first it has an intense young mesquite wood smoke nuance, as if a fresh fire has just been started. The finish is a silky smooth black tea base or background leaving the palate light and crisp. Truly a sublime thought provoking experience. I would pair this with a shoyu and shallot glazed trout.
