Description
Gaiwan “covered bowl” brewing sets were the first ever way to brew tealeaves.
Originally only two pieces (a lidded cup), they are now usually three pieces (a lid, cup and saucer). We think this four-piece gaiwan set is the matchless introduction to drinking from gaiwan tea ware. It is made from glazed, off-white porcelain (perfect for viewing teas’ colors) and contains a saucer to prevent drips and scalding, two cups and a lid. One cup is wider and slightly shorter than the other.
You can use this set to learn to drink tea gaiwan-style by progressively experimenting with the following methods:
* Brew in either cup, and then use the lid to strain the leaves as you pour your tea into the second cup. Drink the tea from the second cup with or without the saucer.
* Brew in either cup, and then pour a small amount of tea directly into the lid. This is ideal for taking small sips of very hot tea, or for sharing your tea with others.
* Brew in the smaller cup. Place it on the saucer and lift it to your lips with your right hand. With your left hand, hold the lid at a slight downward angle atop the cup. Sip as the lid strains the leaves.
* Repeat the above method, but with the larger cup. Use the lid to stir the leaves away from you before each sip. This will make straining the leaves as you sip easier.
* Brew in the large cup and strain with the lid, but do not use the saucer. This is the way gaiwan tea consumption worked before the Ming Dynasty, and it is the most portable use of the gaiwan set.
* Regardless of how you use each component of the set, the lid can be used to stir the leaves into the infusing water, or to cool your tea by stirring it. In between multiple infusions, the lid protects the tealeaves from exposure to air, odors and spillage. The lid can also be used as an aroma enhancer. Simply brew the tea with the lid on, and then tilt the lid slightly for a strong burst of aroma, or lift it to your nose for a subtler scent.
Each cup holds four to five ounces. The lid doubles as a sipping vessel. It holds nearly one ounce.
